Sandwich closeup

Such a simple and delightful lunch option. I served this for lunch today and both Aaron and TJ loved it although Aaron, not a fan of Pesto, had his with mustard, instead.

You can make this sandwich with any kind of bread. I would think Ciabatta would taste good with this combo. I used:
Costco’s Kirkland Pesto Sauce
Trader Joe’s Pastrami (buy the one without nitrates)
Trader Joe’s Mozzarella log (easy for slicing)
Regular Multigrain Brown Bread

For the sandwich:

  • Slather your bread with as much pesto as you like
  • Slice the mozzarella in the thickness you prefer. Because mozzarella does not have a strong flavor of its own, it blends in well with the flavors of pesto and pastrami. Place on your bread
  • Place 2-3 (or 3-4 depending on how thick you want your sandwich or how hungry you are) pastrami slices between your bread.
  • Sandwich is ready.

    Enjoy with mustard and pickles!
